Yep it was a bit problematic for me too, so much so that I had to learn the various passages up to writing a small step-by-step guide in Italian
Once you complete the first stage of installation, it's easy after that ..

Btw, yeah a simple GUI would be welcome

Mednafen can run fast most of the 16bit consoles on an X5000 hardware while the PSX still only usable ...
(Saturn still unplayable on every current Amiga hardware) ...
If you don't have atleast an X1000/X5000 better use FinalBurn and FPSE instead

The 32x is currently not supported by Mednafen nor by any other emulator for Amiga.
Mednafen is very slow, but if you have atleast a Sam460 or a G4 you may atleast expect to runs decently the 16bit home consoles
