i came to notice the absence of an UBoot pref program on my SAM system

I also did find an old thread about this with recent additions.

I too would prefer to have a real OS4 gui for the SAM.

This menu exists in SAM, if not the same, you can invocate it, pressing the "SPACE" key at the start of the machine, when the system shows the drives.

If you press the "ENTER" key, then you enter in the console mode.
